Pumpkin Chili Recipe

You cannot escape pumpkins this time of year. From your coffee to your front door, pumpkins are everywhere!
Well, listen up our little pumpkin heads, embrace pumpkin season! Because if you’re looking to increase collagen production, consuming pumpkins is a perfect way to do so. 


Minerals like zinc and potassium not only help combat redness and inflammation but also increase collagen in the body, which we know is part of the fountain of youth. Niacin, folate, riboflavin, and B6 improve blood circulation, which further helps skin and hair regeneration. That increased blood flow might also help reduce acne. Vitamin C will also give your immune system a boost, which we could all use this time of year. Who knew this winter squash had so many benefits?


So, how do we incorporate pumpkin into our diet? We honestly can’t count the ways; there are so many tasty options! There are obvious recipes like pumpkin pie, bread, and scones. And then savory dishes, like gnocchi with pumpkin cream sauce or a lovely pumpkin bisque. Oh, and you can also munch on the seeds after you’ve carved your pumpkin. For this Nourish Your Skin From Within PSA, we decided to offer a recipe for a savory and hearty turkey pumpkin chili – perfect for your next football Sunday Funday. 😉

INGREDIENTS

  • 1 tablespoon pumpkin oil
  • 1/2 yellow onion, chopped
  • 1 bell pepper, chopped
  • 1 clove garlic, minced
  • 1 lb of diced pumpkin
  • 1 pound ground turkey
  • 3 tablespoons chili powder
  • 1 teaspoon cumin
  • 14.5 ounce black beans, drained
  • 14.5 ounce can of diced tomatoes
  • 4 cups of chicken stock
  • Salt and pepper to taste

INSTRUCTIONS

  1. Saute the pumpkin, onion, bell pepper, and garlic in the pumpkin oil until soft and translucent.
  2. In the same pot, add the spices and brown the turkey.
  3. Next, add black beans, diced tomatoes, and chicken stock.
  4. Cover and simmer on low for about 40 minutes.
  5. Salt and pepper to taste.

Top with lime juice, cilantro, shredded cheese, cream Fraiche, and /or fresh pumpkin seeds. Oh, keep some tortilla chips on hand for scooping up those hearty bites!
