We’re all familiar with the beauty hack of using cold cucumber slices topically to reduce puffy eyes. But what about the “nutrition hack” of eating perhaps a cucumber salad for better skin?
First of all, hydrated skin is happy skin. Considering cucumbers are made up of 96% water, consuming cukes will help plump up any cells. The hydration factor alone makes cucumbers a healthy snacking choice, plus the fact that they are super low-calorie. But, cucumbers also contain the B Vitamins niacin and riboflavin, and Vitamin C and zinc, which help your skin glow from within. Along with Vitamins B and C, cucumbers also are filled with Vitamins A and K, manganese, copper, and potassium. In combination, these nutrients help boost the immune system, which is reflected in 🥒
Hormone imbalances can cause all types of skin disturbances. Cucumbers contain phosphorus, which helps to regulate hormones in the body. One last check in the cucumbers corner – caffeic acid, which fights skin irritation and inflammation.
Okay – so, now we understand why cucumbers are so cool. Here’s a great little cucumber salad to add to your spring/summer diet. It’s simple, tasty, and doesn’t involve any cooking!
Cucumber and Cottage Cheese Salad
Ingredients
- 1 cup of diced cucumbers
- 1/4 cup of low-fat cottage cheese
- 2 tablespoons of scallions
- 1/4 teaspoon of freshly cracked pepper (or less if you can’t hang)
- Dash of sea salt
Instructions
1. Toss all chilled ingredients and enjoy!!!
