That big old Easter Bunny is packing up his baskets and getting ready to deliver and hide (that trickster) the goodies on Sunday. I’m crossing my fingers he’s putting Wasik’s Cheese Shop cheese of the month recommendation in our basket! This beautiful Spanish cheese, Flor de Cabra, is perfect for April. Especially, with the lovely confit, they had us plop on top!

I realize this is a post about cheese, and the Flor de Cabra is perfect for Easter. But, I was really into the rose petal confit pairing.
The matriarch of The Cheese Shop, Carol Wasik, told us this Catalonia cheese is special because it’s made from fresh spring goat’s milk. The milk is especially rich, as it will soon be time to feed all of those hungry little newborn kids!
Remember, goat cheese will always be that pure beautiful milky white because it lacks beta-carotene. Carol suggested honey, or any of the wonderful flower confits from L’epicurien, which you can purchase in their shop.
I went with the rose petals confit. Carol was spot on with her recommendation. The cheese is smooth with a teeny-tiny earthiness in the rind. With the rose petal confit, this is a spring pairing you NEED to have at your Easter or spring celebration.
I may overuse this word, but it truly was delectable. To me, that means delicate, yet sensational, and something I will now be craving on the regular. 🙂
