Feeling weighed down after all of the heavy Thanksgiving Day food? Looking for a healthy break from the upcoming holiday eating sessions? Julie Freed of Freed Events, LLC, has just the right recipe. We love all of Julie’s @Freed_fit recipes, but this fish soup recipe really is hitting the spot for us right now! Mainly because the recent blustery winds have us yearning for a bowl of belly-warming soup. Having a healthy and protein-laden option is just what we need!
Her latest creation feeds 6, and you can whip it up in your instant pot or cook it old-school style on the stove. Enjoy, and thank you, Julie!
Fish Soup Recipe
Ingriedients (Serves 6)
- 1 tbsp.
- EVOO 4 garlic cloves, minced
- 6 large carrots, sliced
- 1 yellow onion, diced
- 1 celery stalk, diced
- 2 cups clam juice
- 4 oz. tomato paste
- 2 cans of diced tomatoes
- 1 cup of water
- 2 tbsp. dried thyme
- (3) 5 oz. Fillets of Cod (or any white fish)
- 1 lime
- 2 tbsp. fresh parsley, chopped
- salt & pepper, and garlic powder – to taste
DIRECTIONS FOR INSTANT POT
- Coat bottom of pot w/ EVOO and layer ingredients as follows:
Vegetables
Clam Juice
Tomato Paste
Diced Tomatoes
Water
Thyme - Add seasonings and set to soup setting, less than 5 minutes.
- Vent to open lid and stir.
- Add fish, close the lid, and cook for 5 minutes.
- Finish with lime and parsley and serve.
DIRECTIONS FOR STOVE TOP
- Coat a large pot with EVOO, add garlic, onion and sauté on high until translucent.
- Then add carrots, celery and ½ of the clam juice and stir periodically for 5 minutes.
- Add the remaining clam juice, tomato paste, diced tomatoes water, thyme and seasonings and simmer for 20
minutes, until all liquid combines to form an even stock. - Add fish cook on medium low heat for 6-8 minutes.
- Finish with lime and parsley and serve.
