After reading Jessica’s yummy recipe for grilled peaches I thought I would share one of my favorite grilled fruit recipes. Grilled pineapple!
Grilled Pineapple Recipe
Ingredients
- 1 fresh whole pineapple
- 3 tablespoons olive oil
- 1/2 cup of honey
- A generous amount of fresh, ground pepper
Instructions
Be sure to select a ripe pineapple. It’s pretty easy to tell using these three rules:
- Check the color. The more yellow, the riper. Greenish-grey isn’t ready and orange is overdone.
- Squeeze it, just a little bit. If your pineapple is slightly soft that’s a good thing. Watch out for the spikes!
- Smell the bottom. If it smells fruity, that’s your fruit!
Before we get to the marinade, you have to prep your pineapple.
- Cut off the top and the bottom of the pineapple and stand it on its bottom.
- Remove the skin by thinly slicing under the skin, all the way around.
- Cut it into circles or into quarters, the long way. (If you do it in quarters you won’t have to deal with the center, fibrous part.) Your choice on how you want it to look!
- Once you’ve sliced your pineapple put it into a zip lock bag.
- Add 3 tablespoons of olive oil, ½ cup of honey, and a generous amount of fresh, ground pepper.
- Close the bag and rub the oil, honey, and pepper over the pineapple. Let it sit for at least a half hour.
- Place pineapple slices on your grill which should be set to medium and cook until you get a nice char.
This is so good! Especially, with this fun wine called “French Pool Toy.” I picked up a bottle of this a couple of weeks ago because I loved the packaging. A lightweight plastic bottle with a screw top and cute label isn’t something that would normally entice me but I just couldn’t resist! We were pleasantly surprised by this light-bodied, dry (very important to me) but crisp wine from Provence. At $12.00 a bottle, I just had to go back and stock up. This is the perfect wine to bring to a picnic, to the beach or to take on a boat. Cheers!
